What makes or breaks Mayo is the oil used. Most Mayo that is marketed at “keto” uses oil like olive oil which has a more pronounced taste than the soy or canola oil used in Hellman’s, which generally have less of a taste. That said, like others have said, hellmans is keto because it’s basically pure fat.

The concern about fats comes down to the trypes of fats contained, but again, that has nothing to do with keto and is just concerned about coronary health and such.

Cold pressed (virgin) which keeps the vitamin e intact. Ignore the fud around canola oil, cut the saturated fat. A spray can of cold pressed canola is your best friend for most cooking.
