I visited the museum in June while in Orlando for work, and because it is being completely re-designed only one hangar was open, and this will be the case for some time. The Sunderland flying boat was not on display and I should think it will be highly unlikely that you would see it flying. They rotate various aircraft in the display hangar, but it is 'pot luck' as to what will be there at any given time. When I was there the Catalina was outside, but at a considerable distance from public access. I would be very wary of going if you specifically want to see the Sunderland, but if you're going to be in Florida anyway it's worth visiting as although very small in terms of public access at the moment, you are likely to still see some interesting aircraft. The hangar tours are worth joining - but I hope by now they will no longer be saying that Britain joined WWII in 1940...
